Story: Bimbache's most ambitious wine to date. Non plus ultra — "nothing further beyond" — was the warning said to be inscribed on the Pillars of Hercules, the rocks flanking the Strait of Gibraltar, marking the end of the Mediterranean world and the beginning of the unknown ocean. El Hierro, the westernmost of the Canary Islands, was long considered the very last point of the known world before that abyss. 

Vinification: The grapes are direct-pressed, and the resulting must ferments with native yeasts in barrel. The wine then rests on its lees for 18 months before being bottled without filtration, without fining, and with only a minimum of added sulfur. Only 1,600 bottles produced.

Tasting notes: It offers a complex nose of pepper, wax, and the island's iron-rich soils, while on the palate it opens broad and generous, before finishing with tension and freshness, carried by the acidity that is El Hierro's defining signature
