Agriculture: From the vineyard surrounding the winery, at the Cruz del Calvario — one of the coolest, most humidity-influenced zones of the Trade Wind belt — comes this electric wine for the most acid-loving palates.
Vinification: The grapes are direct-pressed, and the resulting must ferments with native yeasts in barrel. The wine then rests on its lees for nine months before being bottled without filtration, without fining, and with only a minimum of added sulfur. Only 1,250 bottles produced.
Tasting notes: Beautiful, elegant and wild nose - ocean waves on the rocks, along with a special reduction that can only come from volcanic soil. On the palate, roundness and creaminess with balanced oak. Fantastic concentration, good acidity and complex layers. Good fruit: lemon, hunt of grapefruit and bergamot.
