Vinification: Everything of Sylvain’s is aged in barrel. His whites are bottled roughly a year post-harvest. No SO2 added.
Notes: Deep minerality, refreshing and energetic with concentrated yellow & mature fruit. A hint of honey and sesame. Comforting & round, rich and more classic. improves throughout the bottle and can comfortably take a few years in the cellar.
