Agriculture: Bimbache's Vino de Isla (island wine) is made from a blend of different plots, altitudes, and orientations. Different production processes, harvest times, and blends of varieties aim to reflect the freshness, strength, and volcanic character of the youngest Canary Island. The vines are located in the north and northeast of the island of El Hierro, planted in volcanic sandy soil with small amounts of clay. These are old vines between 50 and 100 years old, located at an altitude of 500-800 meters above sea level, and they are cultivated with great respect and exclusively by hand.

Vinification: The grapes are pressed gently and fermented spontaneously with indigenous yeasts in neutral oak barrels (in stockinger foudres and in French oak barrels), resting for 12 months on the lees. Unfiltered and unclarified, a small amount of sulfites are added before bottling. Only 5,000 bottles produced.

Tasting notes: Beautiful, elegant and wild nose - ocean waves on the rocks, along with a special reduction that can only come from volcanic soil. On the palate, roundness and creaminess with balanced oak. Fantastic concentration, good acidity and complex layers. Good fruit: lemon, hunt of grapefruit and bergamot.
