Agriculture: The grapes are grown in the Los Valles estate in Valverde on El Hierro, surrounding their winery in Cruz del Calvario. This is one of the coolest regions, also influenced strongly by the Alisio wind.
Vinification: This wine is made in a simple way to fully respect the terroir on which the grapes are grown. It's direct press, spontaneous fermentation with indigenous yeasts, and aged in barrel. It remains on the lees until it is bottled. Unfiltered and unclarified, with very little added sulfur. Only 1,250 bottles produced.
